½teaspoonvanilla extractfor extra flavor

Instructions
Preheat the air fryer to 320°F (160°C) to ensure even baking.
In a mixing bowl, mash the bananas until smooth. Add the egg, sugar, oil, and vanilla extract, then whisk until well combined.
In a separate bowl, sift together the flour, baking powder, baking soda, and salt. Stir to combine.
Gradually add the dry ingredients to the wet mixture, folding gently until just combined. Avoid overmixing to keep the muffins light and fluffy.
Line the air fryer basket with silicone or paper muffin liners. Fill each about ¾ full to allow space for rising.
Place the muffin liners in the air fryer, leaving space between them for air circulation. Air fry for 10-12 minutes or until a toothpick inserted into the center comes out clean.
Remove the muffins from the air fryer and let them cool in the liners for 5 minutes before transferring to a wire rack.
Notes
For extra moisture, add a tablespoon of yogurt or sour cream to the batter.
Mix-ins like chocolate chips, walnuts, or cinnamon can be added for more flavor.
If baking in batches, keep the cooked muffins covered while the second batch finishes to retain softness.
