Ingredients
  

  • 2 large bananas overripe, mashed
  • 1 cup all-purpose flour or a mix of all-purpose and whole wheat flour
  • cup sugar brown sugar can be used for a deeper flavor
  • 1 large egg room temperature
  • ¼ cup vegetable oil or melted butter for richer muffins
  • 1 teaspoon baking powder for a fluffy texture
  • ½ teaspoon baking soda helps the muffins rise
  • ½ teaspoon vanilla extract for extra flavor
  • ¼ teaspoon salt balances the sweetness

Instructions
 

  • Preheat the air fryer to 320°F (160°C) to ensure even baking.
  • In a mixing bowl, mash the bananas until smooth. Add the egg, sugar, oil, and vanilla extract, then whisk until well combined.
  • In a separate bowl, sift together the flour, baking powder, baking soda, and salt. Stir to combine.
  • Gradually add the dry ingredients to the wet mixture, folding gently until just combined. Avoid overmixing to keep the muffins light and fluffy.
  • Line the air fryer basket with silicone or paper muffin liners. Fill each about ¾ full to allow space for rising.
  • Place the muffin liners in the air fryer, leaving space between them for air circulation. Air fry for 10-12 minutes or until a toothpick inserted into the center comes out clean.
  • Remove the muffins from the air fryer and let them cool in the liners for 5 minutes before transferring to a wire rack.

Notes

  • For extra moisture, add a tablespoon of yogurt or sour cream to the batter.
  • Mix-ins like chocolate chips, walnuts, or cinnamon can be added for more flavor.
  • If baking in batches, keep the cooked muffins covered while the second batch finishes to retain softness.
