8 ounces cream cheese softened ¼ cup sugar for sweetness 1 large egg at room temperature 1 teaspoon vanilla extract for flavor ½ cup graham cracker crumbs for the crust 2 tablespoons butter melted, to bind the crust 1 tablespoon sugar to sweeten the crust
Preheat the air fryer to 300°F (150°C) to create an ideal cooking environment.
In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until the texture resembles damp sand.
Press the mixture into the bottom of lined mini muffin tins or silicone molds to form a firm crust.

Spoon the cheesecake filling over the crusts, leaving a little space at the top. Gently tap the molds to release any air bubbles.

Remove from the air fryer and let the cheesecake bites cool in the molds before transferring to the fridge to chill for at least 1 hour.
