Equipment

  • Air-fryer For cooking the cheesecake bites evenly
  • Mixing bowls For preparing the crust and filling
  • Mini Muffin Tin or Silicone Molds For shaping the cheesecake bites
  • Electric Mixer For achieving a smooth cheesecake filling

Ingredients

  • 8 ounces cream cheese softened
  • ¼ cup sugar for sweetness
  • 1 large egg at room temperature
  • 1 teaspoon vanilla extract for flavor
  • ½ cup graham cracker crumbs for the crust
  • 2 tablespoons butter melted, to bind the crust
  • 1 tablespoon sugar to sweeten the crust

Instructions

  • Preheat the air fryer to 300°F (150°C) to create an ideal cooking environment.
  • In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until the texture resembles damp sand.
  • Press the mixture into the bottom of lined mini muffin tins or silicone molds to form a firm crust.
  • In another bowl, beat the cream cheese and sugar together until smooth. Add the egg and vanilla extract, mixing until just combined.
  • Spoon the cheesecake filling over the crusts, leaving a little space at the top. Gently tap the molds to release any air bubbles.
  • Place the molds in the air fryer basket and cook for 8-10 minutes, or until the tops are set but still slightly jiggly in the center.
  • Remove from the air fryer and let the cheesecake bites cool in the molds before transferring to the fridge to chill for at least 1 hour.
  • Once fully chilled, serve as-is or top with fruit, chocolate drizzle, or whipped cream.

Notes

  • For a richer flavor, let the cheesecake bites chill overnight before serving.
  • Use silicone molds for easy removal after chilling.
  • Experiment with different toppings like caramel, crushed cookies, or berries to customize the flavor.
