Ingredients
  

  • 1 pound boneless chicken thighs or breast, cut into bite-sized pieces
  • ½ cup yogurt for marination
  • 1 tablespoon ginger-garlic paste for deep flavor
  • 1 teaspoon red chili powder adjust to spice preference
  • 1 teaspoon salt adjust to taste
  • 1 teaspoon garam masala adds warmth and depth
  • 2 tablespoons cornstarch for a crispy coating
  • 2 tablespoons rice flour for added crunch
  • 1 tablespoon lemon juice adds brightness
  • 1 teaspoon oil for air frying
  • 10 leaves curry leaves optional, for garnish

Instructions
 

  • In a mixing bowl, combine the chicken with yogurt, ginger-garlic paste, red chili powder, garam masala, salt, and lemon juice. Mix well and let it marinate for at least 30 minutes.
  • Add cornstarch and rice flour to the marinated chicken, ensuring each piece is evenly coated for a crispy texture.
  • Preheat the air fryer to 380°F (190°C) for a few minutes.
  • Lightly grease the air fryer basket with oil. Arrange the chicken in a single layer, leaving space between each piece.
  • Air fry for 12-15 minutes, shaking the basket halfway through for even cooking. Ensure the internal temperature reaches 165°F (75°C).
  • For extra flavor, toss the cooked chicken in a pan with curry leaves and a drizzle of oil before serving.
  • Serve hot with coconut chutney, lemon wedges, or yogurt-based dips.

Notes

  • For spicier Chicken 65, add a pinch of cayenne or extra chili powder.
  • If you prefer a more traditional finish, temper the chicken with mustard seeds and green chilies before serving.
