1 cup sweet corn fresh, frozen, or canned ½ cup cornmeal ½ cup all-purpose flour 1-2 eggs ¼ cup chopped green onions 1 teaspoon baking powder Salt and pepper to taste Optional spices: paprika cumin, or chili powder
In a mixing bowl, combine the sweet corn, cornmeal, flour, eggs, green onions, baking powder, salt, and pepper. Mix until a batter forms.
Preheat your air fryer to 375°F.
Using a spoon or cookie scoop, form small fritters and place them in the air fryer basket. Remember to leave some space in between!
Air fry for about 12-15 minutes, flipping halfway through until they are golden brown and crispy.
Remove and let cool slightly before serving with your favorite dipping sauce.
For extra crispiness, you can brush or spray the fritters lightly with olive oil before air frying.
Adjust cooking time based on your air fryer model; some might require a tad more or a tad less time to reach perfect crispiness.
