Ingredients
  

  • 1 cup sweet corn fresh, frozen, or canned
  • ½ cup cornmeal
  • ½ cup all-purpose flour
  • 1-2 eggs
  • ¼ cup chopped green onions
  • 1 teaspoon baking powder
  • Salt and pepper to taste
  • Optional spices: paprika cumin, or chili powder

Instructions
 

  • In a mixing bowl, combine the sweet corn, cornmeal, flour, eggs, green onions, baking powder, salt, and pepper. Mix until a batter forms.
  • Preheat your air fryer to 375°F.
  • Using a spoon or cookie scoop, form small fritters and place them in the air fryer basket. Remember to leave some space in between!
  • Air fry for about 12-15 minutes, flipping halfway through until they are golden brown and crispy.
  • Remove and let cool slightly before serving with your favorite dipping sauce.

Notes

  • For extra crispiness, you can brush or spray the fritters lightly with olive oil before air frying.
  • Adjust cooking time based on your air fryer model; some might require a tad more or a tad less time to reach perfect crispiness.
