Ingredients
  

  • 2 medium zucchini grated and drained
  • 1 egg beaten
  • ¼ cup flour or breadcrumbs, for binding
  • ¼ cup Parmesan cheese optional, for added flavor
  • ½ teaspoon salt adjust to taste
  • ½ teaspoon black pepper freshly ground
  • ½ teaspoon garlic powder optional, for extra depth

Instructions
 

  • Grate the zucchini and place it in a colander. Sprinkle with salt and let it sit for 10-15 minutes to release excess moisture.
  • Squeeze out as much liquid as possible using a clean kitchen towel or paper towels. Transfer the drained zucchini to a mixing bowl.
  • Add the beaten egg, flour or breadcrumbs, Parmesan (if using), black pepper, and garlic powder to the bowl. Stir until well combined.
  • Shape the mixture into small patties, about 2 inches wide, and flatten them slightly for even cooking.
  • Lightly grease the air fryer basket, then place the fritters in a single layer, leaving space between them for even crisping.
  • Air fry at 375°F (190°C) for 10-12 minutes, flipping halfway through, until golden brown and crispy on both sides.
  • Serve warm with Greek yogurt, sour cream, or your favorite dipping sauce.

Notes

  • For extra crispness, add a tablespoon of cornstarch to the batter.
  • If making ahead, store fritters in an airtight container and reheat in the air fryer at 350°F for 3-4 minutes.
