Ingredients
  

  • 3 medium apples peeled, cored, and diced
  • 8 ounces brie cheese rind removed, cut into small pieces
  • 1 small shallot finely chopped
  • 2 cloves garlic minced
  • 2 cups vegetable broth or chicken broth
  • ¼ cup white wine dry, such as Sauvignon Blanc
  • ½ cup heavy cream optional, for extra creaminess
  • 1 tablespoon butter for sautéing
  • ½ teaspoon salt adjust to taste
  • ¼ teaspoon black pepper freshly ground
  • 1 teaspoon fresh thyme chopped

Instructions
 

  • Melt butter in a large pot over medium heat. Add shallots and garlic, sautéing until soft and fragrant.
  • Stir in diced apples and cook for a few minutes until slightly softened.
  • Pour in vegetable broth and bring to a gentle simmer. Let cook for about 15 minutes until apples are tender.
  • Blend the soup using an immersion blender or transfer in batches to a stand blender. Blend until completely smooth.
  • Reduce heat to low and stir in the brie cheese, allowing it to melt slowly into the soup. Stir continuously to prevent clumping.
  • Stir in white wine, heavy cream (if using), salt, and black pepper. Simmer for another 5 minutes to blend flavors.
  • Serve warm, garnished with fresh thyme and a drizzle of honey, if desired.

Notes

  • For a sweeter version, use apple cider instead of wine.
  • For a richer flavor, substitute part of the broth with cream.
  • Pairs well with toasted nuts or crispy prosciutto as a topping.
