3 medium apples peeled, cored, and diced 8 ounces brie cheese rind removed, cut into small pieces 1 small shallot finely chopped 2 cloves garlic minced 2 cups vegetable broth or chicken broth ¼ cup white wine dry, such as Sauvignon Blanc ½ cup heavy cream optional, for extra creaminess 1 tablespoon butter for sautéing ½ teaspoon salt adjust to taste ¼ teaspoon black pepper freshly ground 1 teaspoon fresh thyme chopped
Melt butter in a large pot over medium heat. Add shallots and garlic, sautéing until soft and fragrant.
Stir in diced apples and cook for a few minutes until slightly softened.
Pour in vegetable broth and bring to a gentle simmer. Let cook for about 15 minutes until apples are tender.
Blend the soup using an immersion blender or transfer in batches to a stand blender. Blend until completely smooth.
Reduce heat to low and stir in the brie cheese, allowing it to melt slowly into the soup. Stir continuously to prevent clumping.
