12 ounces rotini pasta or other short pasta 2 medium avocados ripe ½ cup Greek yogurt plain 1 tablespoon lemon juice freshly squeezed 2 cloves garlic minced 1 tablespoon ranch seasoning store-bought or homemade 1 cup cherry tomatoes halved 1 cup diced bell peppers any color ¼ cup chopped green onions
Cook pasta in salted water until al dente. Drain and rinse under cold water. Set aside.
In a mixing bowl, mash avocados until smooth. Add Greek yogurt, lemon juice, garlic, and ranch seasoning. Mix until creamy and well blended.
Add cooked pasta, cherry tomatoes, bell peppers, and green onions to a large bowl.
Pour the avocado ranch dressing over the pasta mixture. Toss gently until fully coated.
Chill for at least 30 minutes before serving. Garnish with herbs or extra avocado if desired.
Substitute sour cream for Greek yogurt if preferred.
