Avocado Ranch Pasta Salad

Ingredients
  

  • 12 ounces rotini pasta or other short pasta
  • 2 medium avocados ripe
  • ½ cup Greek yogurt plain
  • 1 tablespoon lemon juice freshly squeezed
  • 2 cloves garlic minced
  • 1 tablespoon ranch seasoning store-bought or homemade
  • 1 cup cherry tomatoes halved
  • 1 cup diced bell peppers any color
  • ¼ cup chopped green onions

Instructions
 

  • Cook pasta in salted water until al dente. Drain and rinse under cold water. Set aside.
  • In a mixing bowl, mash avocados until smooth. Add Greek yogurt, lemon juice, garlic, and ranch seasoning. Mix until creamy and well blended.
  • Add cooked pasta, cherry tomatoes, bell peppers, and green onions to a large bowl.
  • Pour the avocado ranch dressing over the pasta mixture. Toss gently until fully coated.
  • Chill for at least 30 minutes before serving. Garnish with herbs or extra avocado if desired.

Notes

  • Substitute sour cream for Greek yogurt if preferred.
  • Add grilled chicken or bacon to make it a full meal.
  • Use gluten-free pasta to make it gluten-free.
