Equipment

  • Large Bowl To mix meatball ingredients
  • Skillet To cook meatballs
  • Bowl To toss salad greens and vegetables

Ingredients

  • 1 pound ground turkey lean, mildly seasoned
  • 1 egg acts as binder
  • ½ cup breadcrumbs for binding meatballs
  • 1 teaspoon smoked paprika adds smoky depth
  • 1 teaspoon garlic powder enhances savory flavor
  • salt and pepper to taste
  • ½ cup bbq sauce smoky, tangy, and slightly sweet; use reduced-sugar if desired
  • 4 cups fresh salad greens romaine, spinach, or arugula
  • 1 cup cherry tomatoes halved
  • ¼ cup red onion thinly sliced
  • cheese or avocado optional, for creamy richness
  • 2 tablespoons oil for cooking meatballs

Instructions

  • In a large bowl, combine ground turkey, egg, breadcrumbs, smoked paprika, garlic powder, salt, and pepper. Mix gently until uniform, avoiding overmixing for tender meatballs.
  • Form mixture into 1-inch meatballs. Refrigerate 15 minutes to firm up.
  • Heat oil in a skillet over medium heat. Cook meatballs in batches, turning often, until browned and cooked through (165°F/74°C internal temperature).
  • Lower heat. Brush meatballs with BBQ sauce and let it caramelize slightly for deeper flavor.
  • Toss mixed greens, cherry tomatoes, and thinly sliced red onion in a bowl. Arrange warm meatballs on top and drizzle with extra BBQ sauce or creamy dressing if desired.
  • Optionally garnish with crumbled cheese or chopped fresh herbs like cilantro. Serve immediately to keep greens crisp and meatballs juicy.

Notes

  • Prepare turkey meatballs in advance to save time; assembly is fast, perfect for busy nights or packed lunches.
  • Cook and glaze meatballs ahead, storing separately from salad to keep greens crisp.
  • Reheat meatballs gently in oven covered with foil or use microwave bursts to preserve texture.
  • Freeze cooked meatballs for up to 2 months; add moisture before reheating to keep juicy.
  • Use BBQ sauce sparingly on salad to prevent sogginess; serve extra on side if desired.
