Preheat the air fryer to 370°F (188°C) to ensure even cooking.
Roll out the pie crust and cut into equal-sized rectangles.
Spoon a small amount of jam into the center of half of the rectangles, keeping the edges clear.
Place the remaining pastry rectangles over the filled ones and press the edges together.
Use a fork to crimp the edges to seal the Pop-Tarts completely.
Brush the tops with egg wash to create a golden, flaky crust.
Place the Pop-Tarts in a single layer in the air fryer basket and cook for 8-10 minutes, flipping halfway through.
Let the Pop-Tarts cool before glazing.
Mix powdered sugar and milk until smooth, then drizzle over the cooled Pop-Tarts.
Top with sprinkles if desired and let the glaze set before serving.
For a chocolate version, replace the jam with Nutella or melted chocolate.
If using fresh fruit, blend with a bit of sugar to thicken before using as a filling.
Store leftovers in an airtight container and reheat in the air fryer at 350°F for 2-3 minutes.
