Ingredients
  

  • 1 pound potatoes peeled and diced
  • 1 tablespoon butter for sautéing
  • 1 cup heavy cream for creaminess
  • 4 cups chicken broth or vegetable broth
  • 1 tablespoon Cajun seasoning adjust to taste
  • ½ cup cheddar cheese shredded
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 cup smoked sausage sliced (optional)

Instructions
 

  • Sauté onions, garlic, and butter in a large pot over medium heat until softened.
  • Add diced potatoes, Cajun seasoning, and broth. Simmer until potatoes are tender.
  • Lightly mash some of the potatoes for a thicker consistency.
  • Stir in heavy cream and cheese, then simmer for another 5 minutes before serving.

Notes

  • For extra flavor, add crispy bacon on top before serving.
  • This soup thickens as it cools. Add extra broth when reheating.
