1 pound potatoes peeled and diced 1 tablespoon butter for sautéing 1 cup heavy cream for creaminess 4 cups chicken broth or vegetable broth 1 tablespoon Cajun seasoning adjust to taste ½ cup cheddar cheese shredded 1 medium onion diced 2 cloves garlic minced 1 cup smoked sausage sliced (optional)
Sauté onions, garlic, and butter in a large pot over medium heat until softened.
Add diced potatoes, Cajun seasoning, and broth. Simmer until potatoes are tender.
Lightly mash some of the potatoes for a thicker consistency.
