8 ounces pasta such as fettuccine or penne ½ cup sun-dried tomatoes chopped 3 cloves garlic minced 1 cup heavy cream ½ cup Parmesan cheese freshly grated 1 tablespoon olive oil 1 teaspoon Italian seasoning 1 teaspoon salt to taste ¼ teaspoon black pepper freshly ground
Boil the pasta according to the package instructions. Drain and set aside, reserving a little pasta water for later.
Heat olive oil in a large pan over medium heat. Add minced garlic and sauté for about 1-2 minutes, until fragrant.
Add chopped sun-dried tomatoes to the pan and cook for another minute. Pour in heavy cream and stir to combine.
Bring the mixture to a simmer and let it cook for 3-4 minutes, allowing the sauce to thicken.
Stir in Parmesan cheese and season with salt, pepper, and Italian seasoning. Add reserved pasta water if the sauce is too thick.
Toss the cooked pasta into the sauce and mix until well-coated. Serve immediately with extra Parmesan if desired.
For extra flavor, sprinkle some red pepper flakes for a little heat.
If you like a more tangy flavor, add a squeeze of lemon juice to the sauce.
