Ingredients
  

  • 8 ounces pasta such as fettuccine or penne
  • ½ cup sun-dried tomatoes chopped
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • ½ cup Parmesan cheese freshly grated
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt to taste
  • ¼ teaspoon black pepper freshly ground

Instructions
 

  • Boil the pasta according to the package instructions. Drain and set aside, reserving a little pasta water for later.
  • Heat olive oil in a large pan over medium heat. Add minced garlic and sauté for about 1-2 minutes, until fragrant.
  • Add chopped sun-dried tomatoes to the pan and cook for another minute. Pour in heavy cream and stir to combine.
  • Bring the mixture to a simmer and let it cook for 3-4 minutes, allowing the sauce to thicken.
  • Stir in Parmesan cheese and season with salt, pepper, and Italian seasoning. Add reserved pasta water if the sauce is too thick.
  • Toss the cooked pasta into the sauce and mix until well-coated. Serve immediately with extra Parmesan if desired.

Notes

  • For extra flavor, sprinkle some red pepper flakes for a little heat.
  • If you like a more tangy flavor, add a squeeze of lemon juice to the sauce.
  • This dish pairs wonderfully with grilled chicken, shrimp, or roasted vegetables.
