Air Fryer Chicken Quesadillas are a delightful twist on the classic Mexican dish. They feature a savory chicken and cheese filling nestled between crispy, golden tortillas. Ideal as a snack, appetizer, or quick meal, these quesadillas are a breeze to prepare and undeniably satisfying.
In a bowl, mix the shredded chicken with lime juice, minced garlic, cumin powder, and olive oil. Let it marinate for 15 minutes.
In a skillet, heat olive oil over medium heat. Add the bell peppers and onions, sauté until they’re soft and slightly caramelized.
In another bowl, mix the cooked veggies with the marinated chicken.
Lay out the tortillas on a flat surface. Evenly spread the chicken-vegetable mixture over half of each tortilla. Sprinkle cheese on top and fold to close.
Brush the outside of each tortilla with melted butter.
Place one or two quesadillas in the air fryer basket (do not overcrowd).
Air fry for 8-10 minutes, turning halfway through, until the tortillas are golden brown and crispy.
Cut into triangles and serve immediately with salsa, guacamole, or sour cream.
Notes
For an added crunch, lightly spray the quesadillas with cooking spray before air frying.
Store any leftover quesadillas in an airtight container in the refrigerator for up to 2 days.
Reheat the quesadillas in the air fryer for 2-3 minutes to regain their crispiness before serving.
