In a food processor or blender, combine the parsley, garlic, red wine vinegar, oregano, red pepper flakes, salt, and pepper. Pulse until finely chopped and well mixed. Stream in the olive oil until combined.
Pound the chicken breasts to an even thickness using a meat mallet.
Place the chicken breasts in a mixing bowl and cover with half of the chimichurri sauce. Let it marinate for at least 10 minutes.
Preheat your air fryer to 375°F.
Remove the chicken breasts from the marinade and place them in the air fryer basket in a single layer.
Air fry for 12-15 minutes, flipping halfway through, until the chicken is cooked through and reaches an internal temperature of 165°F.
Remove from the air fryer and let rest for a few minutes. Serve with the remaining chimichurri sauce on top.
