Pat the fish fillets dry and cut them into stick-sized pieces.

Dunk each fish stick in the flour first, then coat with egg, and finally roll in the breadcrumbs.
Chill the breaded fish sticks in the fridge for about 15 minutes to help them set.
Preheat the air fryer to 400°F.
Spritz the air fryer basket with cooking spray and arrange the fish sticks in a single layer, making sure they aren’t crowded.
Cook for 10-12 minutes until golden brown and cooked through, flipping halfway.
