Ingredients
  

  • 2 zucchinis chopped into bite-sized pieces
  • 1 eggplant chopped into bite-sized pieces
  • 1 bell pepper any colour, chopped into bite-sized pieces
  • 1 tomato diced or one can of diced tomatoes
  • 1 small onion diced
  • 3 cloves garlic minced
  • 2 tablespoons olive oil
  • Your choice of herbs e.g. basil, thyme

Instructions
 

  • Chop all your veggies into roughly the same size—think bite-sized nuggets of joy!
  • In a mixing bowl, toss the veggies with olive oil, garlic, your choice of herbs, and a touch of salt and pepper. Get in there and mix it up!
  • Preheat the air fryer to 375°F. Add the seasoned veggies to the basket, making sure they aren’t piled up like a game of veggie Jenga!
  • Air fry for about 15-20 minutes, shaking halfway through to ensure they roast evenly. Keep an eye on them until they’re tender and delightful!
  • Serve warm as a fabulous side or as the main event—it’s ratatouille time! Enjoy every delicious bite and feel like a veggie chef extraordinaire!
