2 zucchinis chopped into bite-sized pieces 1 eggplant chopped into bite-sized pieces 1 bell pepper any colour, chopped into bite-sized pieces 1 tomato diced or one can of diced tomatoes 1 small onion diced 3 cloves garlic minced 2 tablespoons olive oil Your choice of herbs e.g. basil, thyme
Chop all your veggies into roughly the same size—think bite-sized nuggets of joy!
In a mixing bowl, toss the veggies with olive oil, garlic, your choice of herbs, and a touch of salt and pepper. Get in there and mix it up!
