In a mixing bowl, toss your veggies and protein (if using) with soy sauce and sesame oil.
Take a spring roll wrapper and lay it flat on a clean surface. Add a spoonful of the filling near the edge, fold in the sides, and roll it up tightly, sealing the edge with a little flour-water mixture.
Preheat your air fryer to 375°F.
Lightly spray the spring rolls with cooking spray to help them crisp up.
Place the rolls in the air fryer basket in a single layer, ensuring they’re not overcrowded.
Cook for about 8-10 minutes, flipping halfway for an even crispy finish.
