4 large bell peppers 1 lb ground meat beef, turkey, or chicken 1 cup cooked rice or quinoa 1 cup tomato sauce 1 cup shredded cheese mozzarella, cheddar, or your choice 1 small onion chopped 2 cloves garlic minced Salt and pepper to taste 1 teaspoon paprika Optional: additional veggies corn, peas, black beans
Preheat your air fryer to 360°F.
Cut the tops off the bell peppers and remove the seeds and membranes.
In a large skillet, cook the ground meat over medium heat until browned. Add onion and garlic, cooking until softened.
Mix in cooked rice, tomato sauce, paprika, and any additional veggies. Season with salt and pepper.
Stuff each bell pepper with the meat and rice mixture and top with shredded cheese.
Place the stuffed peppers upright in the air fryer basket. Don’t overcrowd.
Cook for 10-15 minutes, until the peppers are tender and the cheese is melted and golden.
Carefully remove from the air fryer and let cool for a minute before serving.
Feel free to tweak the spices and add-ins based on your taste preferences.
