Ingredients
  

  • 1 lb large shrimp peeled and deveined
  • 1 cup unsweetened coconut flakes
  • ½ cup panko breadcrumbs
  • 2 eggs beaten
  • ½ cup all-purpose flour
  • Salt and pepper to taste

Instructions
 

  • Preheat your air fryer to 400°F.
  • Set up your dredging station: One bowl with flour, another with beaten eggs, and a third with a mix of coconut flakes, panko, salt, and pepper.
  • Dredge the shrimp in flour, dip in eggs, and coat with the coconut mixture. Get messy—you know you want to!
  • Place the shrimp in the air fryer basket in a single layer (no crowding!), and fry for about 8-10 minutes, flipping halfway through until they’re crispy and golden.
  • Serve hot with your favourite dipping sauce, and enjoy the tropical vibes from the comfort of your couch!

Notes

  • Don’t skimp on the coconut! The more, the merrier—the crunchier the shrimp, the better the bite!
  • These little delights are best enjoyed fresh, but you can keep any leftovers in the fridge for a day or two—if they last that long!
