6 slices bacon cooked and crumbled 1 pound ground beef 80/20 preferred 1 small onion diced 2 cloves garlic minced 4 cups beef broth 2 cups potatoes peeled and diced 1 teaspoon salt adjust to taste ½ teaspoon black pepper adjust to taste 1 teaspoon paprika 2 cups cheddar cheese shredded 1 cup heavy cream 1 tablespoon Dijon mustard optional, for extra burger flavor 1 tablespoon Worcestershire sauce
In a large pot over medium heat, cook the bacon until crispy. Remove and set aside, leaving about 1 tablespoon of bacon fat in the pot.
Add the ground beef to the pot and cook until browned. Drain excess fat.
Stir in diced onion and minced garlic. Cook for 2-3 minutes until softened.
Pour in the beef broth and add diced potatoes, salt, black pepper, and paprika. Bring to a simmer and cook for 15 minutes until potatoes are tender.
Lower the heat and stir in cheddar cheese, heavy cream, Dijon mustard, and Worcestershire sauce. Stir until smooth and creamy.
Return the crispy bacon to the pot, stir well, and serve warm.
For extra thickness, mash some of the cooked potatoes before adding the cheese and cream.
Leftovers store well in the fridge for up to 3 days.
