  • Mixing bowl
  • Whisk or fork

Ingredients
  

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • ¼ cup sugar
  • Pinch of salt
  • ¾ cup milk
  • 1 large egg
  • ¼ cup melted butter

Instructions
 

  • In a mixing bowl, combine the cornmeal, flour, baking powder, sugar, and salt.
  • In a separate bowl, whisk together the milk, egg, and melted butter.
  • Pour the wet ingredients into the dry ingredients and stir until just combined.
  • Grease your muffin tin and pour the batter evenly into each cup, filling them about ⅔ full.
  • Preheat your air fryer to 320°F (160°C).
  • Place the muffin tin in the air fryer basket and cook for about 12-15 minutes, or until a toothpick inserted comes out clean.
  • Allow the muffins to cool for a few minutes before removing them from the tin and serving.

Notes

  • For added sweetness, you can mix in some honey to the batter!
  • Cooking times may vary depending on your air fryer, so keep an eye on those muffins as they bake!
