Instructions
Rinse and thoroughly dry romaine hearts to prevent steaming. Slice them in half lengthwise, then brush cut sides generously with olive oil to promote even grilling and caramelization.
Preheat your grill or grill pan over medium-high heat until hot. Place romaine halves cut-side down and cook for 2 to 3 minutes, avoiding flipping too soon to create bold grill marks and enhance smoky flavor without wilting.
Whisk together anchovy paste (or vegetarian substitute), garlic, lemon juice, egg yolk or mayo, Dijon mustard, and Parmesan. Thin with olive oil to desired creaminess. Keep chilled until serving to contrast the warm lettuce.
Cube stale bread and toss with olive oil, garlic, salt, and pepper. Toast on grill, in a pan, or in the oven until golden and crisp to add fresh crunch that complements the salad’s textures.
Place grilled romaine halves on a serving dish, drizzle evenly with dressing, scatter croutons across the top, then finish with generous shavings of Parmesan. Add grilled lemon wedges for squeezing over each portion.
Serve immediately to enjoy the contrast of warm grilled lettuce with cool creamy dressing and crisp croutons for a memorable sensory experience.
Notes
Make sure romaine hearts are dry before grilling to avoid wilting.
Use either anchovy paste or vegetarian substitutes like capers or miso paste in the dressing.
Prepare dressing and grill romaine ahead but add croutons just before serving to keep crisp.
Store dressing, croutons, and grilled romaine separately to maintain texture if saving leftovers.
Reheat romaine gently in the oven at 350°F covered with foil or use the microwave in short bursts to avoid wilting.
Freeze dressing only, up to 2 months, thaw before use.
