Healthy Chicken Lettuce Wraps

- 1 pound ground chicken
- 3 cloves garlic minced
- 1 tablespoon fresh ginger grated
- 3 green onions chopped
- ¼ cup low-sodium soy sauce
- 2 tablespoons hoisin sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 tablespoon olive oil or avocado oil, for cooking
- ½ cup chopped water chestnuts optional
- 8 leaves butter lettuce or Romaine for wrapping
In a small bowl, whisk together soy sauce, hoisin sauce, rice vinegar, and sesame oil. Set aside.
Heat olive oil in a large skillet over medium-high heat. Add ground chicken and cook, breaking it up, until fully browned and cooked through.
Add garlic and ginger to the skillet. Sauté for 1–2 minutes until fragrant.
Pour sauce into the skillet and stir to coat the chicken. Simmer for 2–3 minutes until slightly thickened.
Stir in chopped green onions and optional water chestnuts. Cook for another minute, then remove from heat.
Spoon warm filling into lettuce leaves. Top with desired garnishes and serve immediately.
- To make vegetarian, substitute tofu or mushrooms for chicken.
- For added heat, stir in chili garlic sauce or red pepper flakes.
- Use iceberg lettuce for crunchier wraps, but Bibb or butter works best for flexibility.
