2 pounds boneless chicken thighs or breasts 1 cup BBQ sauce your favorite brand or homemade 2 tablespoons apple cider vinegar 1 tablespoon brown sugar 1 teaspoon smoked paprika 1 teaspoon garlic powder 1 teaspoon onion powder ½ teaspoon salt adjust to taste ½ cup water or chicken broth
Place chicken in the Instant Pot. Add BBQ sauce, vinegar, brown sugar, paprika, garlic powder, onion powder, salt, and water. Stir to coat.
Seal lid and cook on HIGH pressure for 10 minutes. Let pressure naturally release for 5 minutes, then quick release the rest.
Remove chicken and shred with two forks. Turn Instant Pot to sauté mode and simmer sauce for 5–6 minutes to thicken slightly.
Return shredded chicken to the pot and stir until fully coated with the sauce. Serve hot.
Add hot sauce or chili flakes for a spicier version.
Store leftovers in airtight containers and reheat with extra sauce or broth.
Serve on buns, in wraps, over nachos, or with mashed potatoes.
