Equipment

Ingredients
  

  • 2 pounds boneless chicken thighs or breasts
  • 1 cup BBQ sauce your favorite brand or homemade
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon brown sugar
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt adjust to taste
  • ½ cup water or chicken broth

Instructions
 

  • Place chicken in the Instant Pot. Add BBQ sauce, vinegar, brown sugar, paprika, garlic powder, onion powder, salt, and water. Stir to coat.
  • Seal lid and cook on HIGH pressure for 10 minutes. Let pressure naturally release for 5 minutes, then quick release the rest.
  • Remove chicken and shred with two forks. Turn Instant Pot to sauté mode and simmer sauce for 5–6 minutes to thicken slightly.
  • Return shredded chicken to the pot and stir until fully coated with the sauce. Serve hot.

Notes

  • Add hot sauce or chili flakes for a spicier version.
  • Store leftovers in airtight containers and reheat with extra sauce or broth.
  • Serve on buns, in wraps, over nachos, or with mashed potatoes.
