Instant Pot for pressure cooking the rice
Fine Mesh Strainer for rinsing rice

1 cup long grain white rice rinsed well 1 cup water 1 tablespoon olive oil 1 lime zested and juiced ¼ cup fresh cilantro chopped ½ teaspoon salt or to taste
Add rinsed rice, water, olive oil, and salt to the Instant Pot. Stir to combine.
Seal lid and cook on HIGH pressure for 4 minutes. Let pressure naturally release for 10 minutes, then manually release any remaining pressure.
Fluff the rice with a fork. Stir in lime zest, lime juice, and chopped cilantro. Mix well and serve warm.
Use vegetable broth instead of water for extra flavor.
For a bolder lime kick, add more juice after cooking.
