12 ounces spaghetti or preferred pasta 1 cup ricotta cheese fresh 2 cloves garlic minced 1 tablespoon olive oil 1/4 cup Parmesan cheese freshly grated 1 teaspoon red pepper flakes optional for heat 1 tablespoon fresh parsley chopped 1 teaspoon salt to taste
Cook the spaghetti according to package instructions. Drain, reserving some pasta water.
Heat olive oil in a pan over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
In a bowl, mix ricotta cheese, lemon juice, and zest. Add a little pasta water to achieve a smooth, creamy consistency.
Add the cooked pasta to the pan with the garlic, and pour in the ricotta mixture. Toss to combine.
Season with salt, red pepper flakes, and freshly grated Parmesan. Serve immediately, garnished with fresh parsley.
