Ingredients
  

  • 12 ounces spaghetti or preferred pasta
  • 1 cup ricotta cheese fresh
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 1/4 cup Parmesan cheese freshly grated
  • 1 teaspoon red pepper flakes optional for heat
  • 1 tablespoon fresh parsley chopped
  • 1 teaspoon salt to taste

Instructions
 

  • Cook the spaghetti according to package instructions. Drain, reserving some pasta water.
  • Heat olive oil in a pan over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  • In a bowl, mix ricotta cheese, lemon juice, and zest. Add a little pasta water to achieve a smooth, creamy consistency.
  • Add the cooked pasta to the pan with the garlic, and pour in the ricotta mixture. Toss to combine.
  • Season with salt, red pepper flakes, and freshly grated Parmesan. Serve immediately, garnished with fresh parsley.

Notes

  • Add grilled chicken, shrimp, or vegetables for a heartier meal.
  • For an extra lemony kick, add more zest or a bit of lemon peel.
  • Adjust the creaminess with a bit of pasta water to thin the sauce or more ricotta for extra richness.
