Ingredients
  

  • 2 medium chicken breasts boneless and skinless
  • ½ cup sun-dried tomatoes chopped, packed in oil
  • 1 small onion diced
  • 3 cloves garlic minced
  • 4 cups chicken broth low sodium preferred
  • 1 teaspoon Italian seasoning a mix of basil, oregano, and thyme
  • 1 cup heavy cream for a rich, creamy texture
  • ½ cup parmesan cheese freshly grated
  • 1 tablespoon olive oil for sautéing
  • ½ teaspoon salt adjust to taste
  • ¼ teaspoon black pepper freshly ground
  • ¼ cup fresh basil chopped, for garnish

Instructions
 

  • Heat olive oil in a large pot over medium heat. Sauté onions and garlic until softened and fragrant.
  • Add sun-dried tomatoes, chicken breasts, Italian seasoning, and chicken broth. Bring to a gentle simmer and let cook for 20 minutes.
  • Remove the chicken from the pot and shred it with two forks, then return it to the soup.
  • Reduce heat and stir in heavy cream and parmesan cheese. Stir continuously until the cheese melts and blends into the broth.
  • Season with salt and black pepper. Let the soup cook for another 5 minutes to allow flavors to meld.
  • Serve hot, garnished with fresh basil and extra parmesan, if desired.

Notes

  • For a thicker soup, add a cornstarch slurry before stirring in the cream.
  • Store leftovers in an airtight container in the fridge for up to 4 days.
  • Serve with garlic bread or toasted baguette slices for a complete meal.
