2 medium chicken breasts boneless and skinless ½ cup sun-dried tomatoes chopped, packed in oil 1 small onion diced 3 cloves garlic minced 4 cups chicken broth low sodium preferred 1 teaspoon Italian seasoning a mix of basil, oregano, and thyme 1 cup heavy cream for a rich, creamy texture ½ cup parmesan cheese freshly grated 1 tablespoon olive oil for sautéing ½ teaspoon salt adjust to taste ¼ teaspoon black pepper freshly ground ¼ cup fresh basil chopped, for garnish
Heat olive oil in a large pot over medium heat. Sauté onions and garlic until softened and fragrant.
Add sun-dried tomatoes, chicken breasts, Italian seasoning, and chicken broth. Bring to a gentle simmer and let cook for 20 minutes.
Remove the chicken from the pot and shred it with two forks, then return it to the soup.
Reduce heat and stir in heavy cream and parmesan cheese. Stir continuously until the cheese melts and blends into the broth.
Season with salt and black pepper. Let the soup cook for another 5 minutes to allow flavors to meld.
Serve hot, garnished with fresh basil and extra parmesan, if desired.
