Ingredients
  

  • 1 head cauliflower cut into bite-sized florets
  • 2 tablespoons white miso paste adds deep umami flavor
  • 1 tablespoon soy sauce or tamari for gluten-free
  • 1 tablespoon rice vinegar adds brightness
  • 1 tablespoon maple syrup balances the savory miso
  • 1 tablespoon toasted sesame oil adds nuttiness and depth
  • 1 clove garlic minced for extra flavor
  • 1 teaspoon ginger grated
  • 1 tablespoon sesame seeds for garnish
  • 2 tablespoons green onions chopped for garnish

Instructions
 

  • Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • In a bowl, whisk together miso paste, soy sauce, rice vinegar, maple syrup, sesame oil, garlic, and ginger until smooth.
  • Toss cauliflower florets in the miso glaze until evenly coated.
  • Spread the cauliflower on the prepared baking sheet in a single layer.
  • Roast for 20-25 minutes, flipping halfway through, until golden brown and caramelized.
  • Garnish with sesame seeds and chopped green onions before serving.

Notes

  • For extra crispiness, broil for the last 2 minutes of cooking.
  • Use red miso for a deeper, more intense umami flavor.
  • Pair with a spicy dipping sauce for added heat.
