1 lb boneless, skinless chicken breast cut into bite-sized pieces 2 tablespoon vegetable oil 3 cloves garlic minced 1- inch piece of ginger peeled and grated 1 small head of Napa cabbage chopped 1 red bell pepper sliced 1 cup sugar snap peas 4 green onions chopped Salt and pepper to taste
Heat oil in a wok or large skillet over medium-high heat.
Add chicken pieces and cook until browned, about 5 minutes.
Add garlic and ginger, stir-fry for 1 minute.
Add Napa cabbage, red bell pepper, and sugar snap peas to the wok. Stir-fry for another 5 minutes or until vegetables are tender-crisp.
Season with salt and pepper to taste.
Garnish with chopped green onions before serving.
