Ingredients
  

  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 4 large yellow onions thinly sliced
  • 1 teaspoon salt adjust to taste
  • ½ teaspoon black pepper adjust to taste
  • ½ teaspoon sugar helps caramelize the onions
  • ½ cup white wine dry, such as Sauvignon Blanc
  • 4 cups beef broth
  • 1 bay leaf
  • 1 teaspoon fresh thyme or ½ teaspoon dried thyme
  • 1 baguette sliced into rounds
  • 1.5 cups Gruyère cheese grated

Instructions
 

  • Heat butter and olive oil in a large pot over medium heat. Add sliced onions, salt, black pepper, and sugar. Cook, stirring occasionally, until caramelized and golden brown, about 30 minutes.
  • Pour in white wine and stir, scraping up any browned bits from the bottom of the pot. Let it simmer for 2-3 minutes until reduced.
  • Add beef broth, bay leaf, and thyme. Bring to a simmer and cook for another 20 minutes to blend the flavors.
  • Meanwhile, preheat the broiler. Arrange baguette slices on a baking sheet and toast until lightly golden. Sprinkle with grated Gruyère and broil until bubbly and melted.
  • Remove the bay leaf from the soup and adjust seasoning as needed. Ladle into bowls, top with cheese toast, and serve warm.
