1 pound ground beef 1 small onion diced 2 cloves garlic minced 2 medium potatoes peeled and diced 4 cups chicken or beef broth 1 tablespoon Worcestershire sauce 1 teaspoon salt adjust to taste ½ teaspoon black pepper adjust to taste 1 cup whole milk 2 cups cheddar cheese shredded 1 tablespoon cornstarch mixed with 2 tablespoons water ½ teaspoon paprika 2 tablespoons cooked bacon crumbled, for garnish 2 tablespoons green onions chopped, for garnish
In a large skillet, cook ground beef over medium heat until fully browned. Drain excess fat.
Transfer the cooked beef to a slow cooker. Add diced onion, garlic, potatoes, broth, Worcestershire sauce, salt, black pepper, and paprika. Stir well.
Cover and cook on low for 6-7 hours or on high for 3-4 hours until the potatoes are tender.
In the last 30 minutes, stir in the milk and shredded cheddar. If the soup needs thickening, mix cornstarch with water and stir it in.
Taste and adjust seasoning as needed. Ladle into bowls and garnish with crumbled bacon and chopped green onions before serving.
For a cheesier version, use a mix of sharp cheddar and Monterey Jack.
Leftovers store well in the fridge for up to 4 days.
