Ingredients
  

  • 1 pound ground beef
  • 1 small onion diced
  • 2 cloves garlic minced
  • 2 medium potatoes peeled and diced
  • 4 cups chicken or beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt adjust to taste
  • ½ teaspoon black pepper adjust to taste
  • 1 cup whole milk
  • 2 cups cheddar cheese shredded
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • ½ teaspoon paprika
  • 2 tablespoons cooked bacon crumbled, for garnish
  • 2 tablespoons green onions chopped, for garnish

Instructions
 

  • In a large skillet, cook ground beef over medium heat until fully browned. Drain excess fat.
  • Transfer the cooked beef to a slow cooker. Add diced onion, garlic, potatoes, broth, Worcestershire sauce, salt, black pepper, and paprika. Stir well.
  • Cover and cook on low for 6-7 hours or on high for 3-4 hours until the potatoes are tender.
  • In the last 30 minutes, stir in the milk and shredded cheddar. If the soup needs thickening, mix cornstarch with water and stir it in.
  • Taste and adjust seasoning as needed. Ladle into bowls and garnish with crumbled bacon and chopped green onions before serving.

Notes

  • For a cheesier version, use a mix of sharp cheddar and Monterey Jack.
  • Leftovers store well in the fridge for up to 4 days.
  • Serve with garlic bread or fries for a complete meal.
