1 tablespoon olive oil 1 small onion diced 3 cloves garlic minced 2 cans black beans drained and rinsed 3 cups vegetable broth 1 tablespoon chipotle peppers in adobo sauce chopped 1 teaspoon smoked paprika 1 teaspoon ground cumin 1 teaspoon salt adjust to taste ½ teaspoon black pepper adjust to taste 1 tablespoon lime juice freshly squeezed ¼ cup cilantro chopped ¼ cup queso fresco crumbled, for garnish (optional)
