1poundboneless chicken breastcut into bite-sized pieces
1teaspoonSalt and pepperto taste
½teaspoonGarlic powderto taste
½teaspoonPaprikato taste
1cuppanko breadcrumbs
Olive oil sprayabout 5-7 sprays
Instructions
If marinating, mix your chicken pieces with lemon juice and yogurt in a bowl. Cover and let sit in the fridge for at least 30 minutes (or up to overnight).
Preheat your air fryer to 400°F.
In a bowl, combine salt, pepper, garlic powder, and paprika. Toss the chicken pieces in the spice mix until they’re well coated.
Dip each chicken piece into the panko breadcrumbs, ensuring they’re nicely covered.
Spray the air fryer basket with olive oil spray and add the chicken bites in a single layer.
Cook for 12-15 minutes, flipping halfway through, until golden brown and cooked through (165°F internally).
Let the bites rest for a few minutes, then dig in!
Notes
For lighter options, you can skip the breadcrumbs altogether and just season the chicken directly.
Adjust your cook time if you have larger or thicker pieces of chicken—nobody wants an undercooked chicken bite on their plate!
