Ingredients
  

  • 1 cup dry polenta
  • 4 cups water or broth
  • 1 teaspoon salt to taste
  • 2 tablespoons olive oil
  • ¼ cup Parmesan cheese optional
  • 1 teaspoon your choice of herbs and spices to taste

Instructions
 

  • Cook the polenta: In a saucepan, bring water (or broth) to a boil, stir in polenta, and add salt. Reduce heat and cook for 10-15 minutes, stirring frequently until thick.
  • Let it chill: Pour cooked polenta into a greased dish and spread it out. Let it cool in the fridge for at least 1 hour, or until firm.
  • Cut it: Once chilled, cut the polenta into bite-sized pieces or fries.
  • Season: Drizzle olive oil over the pieces and sprinkle with any additional herbs or cheese if using.
  • Preheat the air fryer: Set it to 400°F.
  • Air fry: Place polenta pieces in the air fryer basket in a single layer. Cook for about 12-15 minutes, flipping halfway through until golden and crispy.
  • Serve up: Enjoy your crispy polenta as a delightful side or snack!

Notes

  • For added crunch, you can dust the polenta pieces with some cornstarch before air frying.
  • If you like things spicy, consider adding red pepper flakes to your polenta before chilling it!
