2 pounds potatoes peeled and cubed 1 cup shredded cheese of your choice ¼ cup green onions chopped Salt to taste Black pepper to taste 1 teaspoon garlic powder 1 cup breadcrumbs preferably panko 1 large egg beaten Olive oil spray
Boil the potatoes in a large pot until fork-tender, about 15-20 minutes. Drain and allow to cool slightly.
In a mixing bowl, mash the potatoes until smooth. Mix in the cheese, green onions, salt, pepper, and garlic powder.
Allow the mixture to cool in the fridge for about 30 minutes to help it firm up.
Once cooled, take a tablespoon of the mixture and shape it into small logs or patties.
Dip each croquette in the beaten egg, then roll in the breadcrumbs to coat well.
Lightly spray the air fryer basket with olive oil and place the croquettes in a single layer. Spray the tops lightly with oil.
Air fry at 375°F for about 15 minutes or until golden brown, flipping halfway through for even crispiness.
