Pierce the eggplant a few times with a fork and place it in the air fryer basket. Cook for about 20-25 minutes, or until the skin is charred and the flesh is soft. Let it cool for a few minutes before handling.
Scoop the roasted eggplant into a blender or food processor. Add tahini, garlic, lemon juice, olive oil, and salt, blending until smooth and creamy.
Taste and adjust seasonings as necessary. If you want a splash more zing, go ahead and add another squeeze of lemon.
Serve it up in a bowl, drizzled with olive oil and garnished with paprika or sumac. Dive right in; your taste buds will thank you!
Notes
Feel free to adjust the garlic according to your taste—more garlic is always a good idea, right?
Baba ganoush keeps well in the fridge for a few days, but let’s be honest, it probably won’t last that long!
