Ingredients
  

  • 1 large eggplant
  • ¼ cup tahini
  • 2 cloves garlic minced
  • 2 tablespoons lemon juice or to taste
  • 2 tablespoons olive oil plus more for drizzling
  • 1 teaspoon salt or to taste
  • 1 teaspoon paprika or sumac for garnish

Instructions
 

  • Preheat your air fryer to 375°F.
  • Pierce the eggplant a few times with a fork and place it in the air fryer basket. Cook for about 20-25 minutes, or until the skin is charred and the flesh is soft. Let it cool for a few minutes before handling.
  • Scoop the roasted eggplant into a blender or food processor. Add tahini, garlic, lemon juice, olive oil, and salt, blending until smooth and creamy.
  • Taste and adjust seasonings as necessary. If you want a splash more zing, go ahead and add another squeeze of lemon.
  • Serve it up in a bowl, drizzled with olive oil and garnished with paprika or sumac. Dive right in; your taste buds will thank you!

Notes

  • Feel free to adjust the garlic according to your taste—more garlic is always a good idea, right?
  • Baba ganoush keeps well in the fridge for a few days, but let’s be honest, it probably won’t last that long!
