Ingredients
  

  • 12 ounces cheese tortellini fresh or refrigerated
  • 1 pound chicken breast diced into small pieces
  • 3 cloves garlic minced
  • 1 tablespoon tomato paste
  • 1 can crushed tomatoes 14.5 ounces
  • ½ cup heavy cream
  • ½ cup Parmesan cheese grated
  • 2 tablespoons olive oil
  • ¼ cup fresh basil chopped or torn
  • salt and pepper to taste

Instructions
 

  • Heat olive oil in a large skillet over medium-high heat. Add diced chicken and cook until browned and cooked through. Remove and set aside.
  • Add minced garlic and tomato paste to the skillet. Cook for 1 to 2 minutes until fragrant and the tomato paste darkens slightly.
  • Pour in crushed tomatoes and stir well. Let simmer for 3 to 5 minutes to deepen the sauce flavor.
  • Add fresh tortellini to the skillet. Cover and cook for 5 to 7 minutes until the pasta is tender.
  • Stir in heavy cream and Parmesan cheese. Return the chicken to the skillet and toss everything together until the sauce is creamy and heated through.
  • Season with salt and pepper to taste. Stir in fresh basil just before serving.

Notes

  • Use fresh tortellini for best texture and flavor.
  • Substitute half-and-half for cream for a lighter sauce.
  • Add crushed red pepper flakes for heat.
