Ingredients
  

  • 1 can diced tomatoes with green chilies undrained
  • 1 can black beans drained and rinsed
  • 1 can pinto beans drained and rinsed
  • 1 can corn drained
  • 1 can tomato sauce
  • 1 can chicken broth low sodium preferred
  • 1 packet taco seasoning

Instructions
 

  • Open all seven cans and pour them directly into a large pot over medium heat. No draining is necessary for the diced tomatoes or tomato sauce.
  • Stir in the taco seasoning and mix well until evenly distributed.
  • Let the soup simmer for 20 minutes, stirring occasionally, until heated through and well combined.
  • Taste and adjust seasoning if needed. Add more taco seasoning or a pinch of salt to enhance the flavors.
  • Serve hot with optional toppings such as shredded cheese, crushed tortilla chips, sour cream, or fresh cilantro.

Notes

  • For extra protein, add cooked ground beef or shredded chicken.
