Ingredients
  

  • 4 cups assorted vegetables carrots, zucchini, bell peppers, broccoli, cauliflower
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1 teaspoon dried rosemary or thyme

Instructions
 

  • Preheat your air fryer to 375°F.
  • Slice your vegetables into even-sized pieces.
  • In a large mixing bowl, toss the veggies with olive oil, salt, pepper, and garlic powder. Add rosemary or thyme if desired.
  • Place the veggies in the air fryer basket, making sure not to overcrowd them.
  • Cook for 15 minutes, shaking the basket halfway through to ensure even roasting.
  • Once done, transfer the roasted veggies to a serving bowl and enjoy them hot.
