Ingredients
  

  • 1 cup all-purpose flour for structure
  • 2 large eggs room temperature, for puffing the puddings
  • ¾ cup milk whole milk preferred, for smooth texture
  • ½ teaspoon salt for enhancing flavor
  • 2 tablespoons oil or beef drippings for crisp texture

Instructions
 

  • Preheat the air fryer to 400°F (200°C). Place a small amount of oil or beef drippings into each muffin tin or silicone mold and heat for 5 minutes.
  • In a mixing bowl, whisk together the flour, eggs, milk, and salt until smooth. Let the batter rest for at least 30 minutes for better texture and rise.
  • Carefully remove the preheated muffin tin or molds from the air fryer and quickly pour the batter into each section, filling halfway.
  • Return to the air fryer and cook for 12-15 minutes, or until the puddings have puffed up and are golden brown. Do not open the air fryer during cooking.
  • Remove from the air fryer and serve immediately for the best texture. Pair with roast beef, gravy, or your favorite fillings.

  • For extra crispy puddings, let the batter rest longer before cooking.
  • Use beef drippings for a traditional flavor or vegetable oil for a lighter option.
