1cupcooked chicken or beefoptional

Instructions
Preheat your air fryer to 375°F.
Lay out the tortillas on a flat surface. Sprinkle half of the cheese evenly over one half of each tortilla.
Add the cooked chicken or beef, bell peppers, and onions over the cheese. Top with the remaining cheese.
Fold each tortilla in half to form a half-moon shape.
Lightly brush both sides of the tortillas with olive oil.
Place the quesadillas in the air fryer basket in a single layer. Air fry for 8-10 minutes, flipping halfway through, until the tortillas are golden brown and the cheese is melted.
Carefully remove the quesadillas from the air fryer. Cut into wedges and serve hot with salsa and sour cream.
Notes
Cooking times may vary based on the size and thickness of your quesadillas and air fryer model.
For an extra crispy finish, brush a little more olive oil before air frying.
Store any leftovers in an airtight container and reheat in the air fryer for a few minutes for best results.
