Ingredients
  

  • 6 slices bacon chopped
  • 1 small onion diced
  • 2 cloves garlic minced
  • 4 cups chicken broth
  • 2 medium potatoes peeled and diced
  • 4 cups green cabbage shredded
  • 1 cup heavy cream
  • ½ teaspoon salt adjust to taste
  • ½ teaspoon black pepper adjust to taste
  • ¼ teaspoon smoked paprika optional, for extra smokiness
  • 1 tablespoon butter

Instructions
 

  • In a large pot, cook chopped bacon over medium heat until crispy. Remove half of the bacon and set it aside for garnish.
  • Add diced onion to the bacon fat and sauté until softened, about 3-4 minutes. Stir in minced garlic and cook for another minute.
  • Pour in chicken broth and bring to a simmer. Add diced potatoes and shredded cabbage. Cook for about 15 minutes until potatoes are tender.
  • Reduce heat and stir in heavy cream, salt, black pepper, and smoked paprika if using. Let it simmer for another 5 minutes.
  • Taste and adjust seasoning if needed. Serve warm, garnished with reserved crispy bacon.

Notes

  • For a thicker soup, mash some of the potatoes before adding the cream.
  • Leftovers can be stored in an airtight container in the fridge for up to 3 days.
  • Try serving with a slice of toasted bread or cornbread.
