6 slices bacon chopped 1 small onion diced 2 cloves garlic minced 4 cups chicken broth 2 medium potatoes peeled and diced 4 cups green cabbage shredded 1 cup heavy cream ½ teaspoon salt adjust to taste ½ teaspoon black pepper adjust to taste ¼ teaspoon smoked paprika optional, for extra smokiness 1 tablespoon butter
In a large pot, cook chopped bacon over medium heat until crispy. Remove half of the bacon and set it aside for garnish.
Add diced onion to the bacon fat and sauté until softened, about 3-4 minutes. Stir in minced garlic and cook for another minute.
Pour in chicken broth and bring to a simmer. Add diced potatoes and shredded cabbage. Cook for about 15 minutes until potatoes are tender.
Reduce heat and stir in heavy cream, salt, black pepper, and smoked paprika if using. Let it simmer for another 5 minutes.
Taste and adjust seasoning if needed. Serve warm, garnished with reserved crispy bacon.
For a thicker soup, mash some of the potatoes before adding the cream.
Leftovers can be stored in an airtight container in the fridge for up to 3 days.
