2 tablespoons butter 1 small onion diced 4 cloves garlic minced 3 cups mushrooms sliced (cremini, button, or shiitake) 4 cups vegetable or chicken broth 1 teaspoon dried thyme 1 cup heavy cream ½ teaspoon salt adjust to taste ½ teaspoon black pepper adjust to taste
Melt butter in a large pot over medium heat. Add sliced mushrooms and cook until they release their moisture and start to brown.
