1.5lbsbonelessskinless chicken breasts, cut into 1-inch pieces
½cupcornstarch
2large eggsbeaten
1cupbreadcrumbs
1teaspoonsalt

For the Sauce:
½cuppineapple juice
¼cuprice vinegar
¼cupketchup
¼cupbrown sugar
1tablespoonsoy sauce
1tablespooncornstarch mixed with 2 tablespoons water
Instructions
Preheat your air fryer to 375°F.
Season the chicken pieces with salt and pepper.
Coat the chicken pieces in cornstarch, then dip into beaten eggs, and finally coat with breadcrumbs.
Arrange the coated chicken pieces in a single layer in the air fryer basket.
Air fry for 12-15 minutes, shaking the basket halfway through, until the chicken is golden brown and crispy.
While the chicken is cooking, prepare the sauce. In a small saucepan over medium heat, combine pineapple juice, rice vinegar, ketchup, brown sugar, and soy sauce, stirring until smooth.
