- 2 bell peppers sliced into bite-sized pieces
- 1 zucchini sliced into bite-sized pieces
- 2 carrots sliced into bite-sized pieces
- 1 head of broccoli cut into florets
- 1 cup mushrooms sliced into bite-sized pieces
- 1 cup tempura batter mix
- 1 cup ice cold water
- Salt to taste
- Vegetable oil for drizzling
Slice your vegetables into bite-sized pieces and set aside.
In a mixing bowl, combine the tempura batter mix with ice-cold water until just combined. Don’t overmix!
Preheat your air fryer to 375°F.
Dip each piece of vegetable into the batter, then place them in the air fryer basket. Don’t overcrowd!
Drizzle a little vegetable oil over the vegetables.
Cook for 10-15 minutes, shaking the basket halfway through cooking to ensure even crisping.
Sprinkle a bit of salt over the tempura vegetables as soon as they come out of the air fryer.
Serve with your favorite dipping sauce.
