Ingredients
  

  • 2 bell peppers sliced into bite-sized pieces
  • 1 zucchini sliced into bite-sized pieces
  • 2 carrots sliced into bite-sized pieces
  • 1 head of broccoli cut into florets
  • 1 cup mushrooms sliced into bite-sized pieces
  • 1 cup tempura batter mix
  • 1 cup ice cold water
  • Salt to taste
  • Vegetable oil for drizzling

Instructions
 

  • Slice your vegetables into bite-sized pieces and set aside.
  • In a mixing bowl, combine the tempura batter mix with ice-cold water until just combined. Don't overmix!
  • Preheat your air fryer to 375°F.
  • Dip each piece of vegetable into the batter, then place them in the air fryer basket. Don't overcrowd!
