1 lb chicken breast cut into strips ¼ cup peanut butter ¼ cup soy sauce 2 tablespoons honey 2 cloves garlic minced 1 inch ginger grated 2 tablespoons lime juice ¼ cup coconut milk
In a mixing bowl, combine peanut butter, soy sauce, honey, garlic, ginger, lime juice, and coconut milk. Mix well.
Add the chicken strips to the marinade. Stir to coat the chicken evenly and let it marinate for at least 30 minutes.
Preheat your air fryer to 375°F.
Thread the marinated chicken strips onto skewers.
Place the skewers in the air fryer basket in a single layer.
Air fry for 12-15 minutes, flipping halfway through, until the chicken is cooked through and slightly charred.
Remove skewers from the air fryer and let them cool slightly before serving.
Cooking times may vary based on the thickness of your chicken strips and the size of your air fryer.
Leftover satay can be stored in an airtight container and reheated in the air fryer.
If you want extra sauce for dipping, reserve some of the marinade before adding the raw chicken and heat it up separately.
