Heat olive oil in a large pot over medium heat. Add diced onion and cook until softened, about 3-4 minutes. Stir in minced garlic and cook for another minute until fragrant.
Pour in the broth and add diced sweet potatoes. Bring to a simmer and cook for about 10 minutes until the potatoes start to soften.
Stir in the thyme, salt, and black pepper. Let the soup continue to simmer for another 5 minutes.
Add the chopped kale and chickpeas (if using). Stir well and cook for another 5 minutes until the kale is tender.
Remove from heat and stir in fresh lemon juice. Taste and adjust seasoning as needed.
