Ingredients
  

  • 1 tablespoon olive oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • 2 medium sweet potatoes peeled and diced
  • 4 cups vegetable or chicken broth
  • 1 teaspoon dried thyme
  • ½ teaspoon salt adjust to taste
  • ½ teaspoon black pepper adjust to taste
  • 3 cups kale stems removed, chopped
  • 1 can chickpeas drained and rinsed (optional)
  • 1 tablespoon lemon juice freshly squeezed

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add diced onion and cook until softened, about 3-4 minutes. Stir in minced garlic and cook for another minute until fragrant.
  • Pour in the broth and add diced sweet potatoes. Bring to a simmer and cook for about 10 minutes until the potatoes start to soften.
  • Stir in the thyme, salt, and black pepper. Let the soup continue to simmer for another 5 minutes.
  • Add the chopped kale and chickpeas (if using). Stir well and cook for another 5 minutes until the kale is tender.
  • Remove from heat and stir in fresh lemon juice. Taste and adjust seasoning as needed.
  • Ladle into bowls and serve warm. Garnish with extra black pepper or a drizzle of olive oil if desired.

Notes

  • For a creamier texture, blend part of the soup before serving.
  • Leftovers can be stored in an airtight container in the fridge for up to 3 days.
  • Serve with garlic bread or a fresh salad for a complete meal.
