What You Need for This Recipe

A handful of ingredients come together to create something incredibly flavorful, and for a simple, protein-rich side consider deviled eggs basics and tips. (many are pantry staples like onion, garlic, and olive oil)

  • Sweet Potatoes - These add natural sweetness and a creamy texture when cooked down. They also bring essential vitamins and a boost of fiber.
  • Kale - a filling green that holds up well in soups, especially curly kale with sturdy leaves and high vitamin K content.
  • Vegetable or Chicken Broth - Forms the base of the soup, adding depth and richness. Use homemade broth for an even deeper flavor. (or low-sodium store-bought when short on time)
  • Aromatics - Onion, garlic, and a touch of thyme build layers of flavor in the broth. These small additions make a big difference.
  • Protein (Optional) - Chickpeas, white beans, or shredded chicken can make this soup even more filling; for a spicy, meaty option try 'Nduja sausage for bold, spicy flavor.

Ways to Customize This Soup

This soup is easy to modify based on what you have in your kitchen.

For bright, Mediterranean-style side ideas that pair well with lemony or herbed soups, see Mediterranean-style sides for lemony soups.

  • Make It Spicier - Add a pinch of red pepper flakes for a little heat.
  • Switch the Greens - Use spinach or collard greens instead of kale; spinach wilts faster and needs less cooking time.
  • Add More Protein - Try cooked sausage, lentils, or tofu for a different texture. (use pre-cooked or canned lentils, or fully cooked sausage)
  • Make It Creamy - Blend part of the soup for a thicker, creamier consistency; for a spicier take try creamy Cajun potato soup ideas.
