6 chicken thighs boneless, skinless ⅓ cup honey ⅓ cup soy sauce low sodium preferred 5 cloves garlic minced ¼ cup water 1 tablespoon rice vinegar 1 teaspoon sesame oil optional ½ teaspoon red pepper flakes optional, for heat
Add honey, soy sauce, garlic, water, rice vinegar, and sesame oil to the Instant Pot. Stir to combine.
Place chicken thighs into the sauce. Turn to coat evenly.
Seal the Instant Pot lid and cook on HIGH pressure for 10 minutes. Let pressure naturally release for 5 minutes, then quick release the rest.
Turn on sauté mode. Simmer the sauce for 3–5 minutes to thicken, stirring occasionally. Serve chicken with sauce spooned over top.
Add cornstarch slurry if you prefer a thicker sauce.
Use bone-in thighs with 2 extra minutes of cook time.
Serve with rice, noodles, or steamed vegetables.
