Instructions
Season the pork tenderloin with salt and pepper. Set the Instant Pot to sauté and sear the pork on all sides until browned, about 2–3 minutes per side.
In a bowl, whisk together soy sauce, brown sugar, honey, garlic, ginger, rice vinegar, and sesame oil. Pour the sauce over the pork in the pot.
Seal the lid and pressure cook on high for 5 minutes. Allow natural release for 10 minutes, then open the lid.
Remove the pork and set aside to rest. Turn Instant Pot to sauté and stir in a cornstarch slurry (cornstarch + water). Simmer until sauce thickens, about 3–4 minutes.
Slice the pork into medallions. Serve with sauce spooned over the top and garnish with sesame seeds and green onions.

Swap pork tenderloin for boneless chicken thighs—same cook time.
