Ingredients
  

  • 1.25 pounds pork tenderloin trimmed
  • cup low-sodium soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon honey
  • 3 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil optional
  • 1 tablespoon cornstarch
  • 1 tablespoon water to mix with cornstarch
  • salt and pepper to season pork
  • sesame seeds optional for garnish
  • green onions sliced, for topping

Instructions
 

  • Season the pork tenderloin with salt and pepper. Set the Instant Pot to sauté and sear the pork on all sides until browned, about 2–3 minutes per side.
  • In a bowl, whisk together soy sauce, brown sugar, honey, garlic, ginger, rice vinegar, and sesame oil. Pour the sauce over the pork in the pot.
  • Seal the lid and pressure cook on high for 5 minutes. Allow natural release for 10 minutes, then open the lid.
  • Remove the pork and set aside to rest. Turn Instant Pot to sauté and stir in a cornstarch slurry (cornstarch + water). Simmer until sauce thickens, about 3–4 minutes.
  • Slice the pork into medallions. Serve with sauce spooned over the top and garnish with sesame seeds and green onions.

Notes

  • Swap pork tenderloin for boneless chicken thighs—same cook time.
  • Add pineapple chunks at the end for a sweet twist.
  • Leftover sauce pairs well with rice or steamed vegetables.
